Did you know that until just a decade ago, the scientific community believed that the brain we formed in childhood was the brain we were stuck with? It was assumed we created so many neural connections in childhood and that when we were done, we were done.
In fact, and thankfully, our brains do change with our thoughts.
Neuroscience, now refers to the brain as “plastic” which means that a material has the ability to change, to be molded into different shapes.
“Neuroplasticity is your brain’s ability to alter its physical structure, to repair damaged regions, to grow new neurons and get rid of old ones, to rezone regions that performed one task and have them assume a new task, and to change the circuitry that weaves neurons into the networks that allow us to remember, feel, suffer, think, imagine, and dream.” Teresa Aubele, Ph.D
Of course, I love that science now backs up the idea that meditation, hypnosis, and dreaming are all players when it comes to changing your mind !

Pesto

It couldn’t be easier. Pick up a bunch at a local market for around $2.00. Get a small quantity of nuts, pine nuts are best, but walnuts or a combination will do. You also need extra-virgin olive oil,garlic, and a mixture of Parmesan and Romano cheese. If you buy un grated cheese, save the rinds to add to this fall’s Minestrone soup.
Here is Marzella Hazen’s pesto recipe. She is my “go to” for all things Italian.
Put 2 cups of basil leaves into a blender or food processor. Add 2 cups of olive oil, 2T of pine nuts (I like to toast these first) 2 cloves of mashed garlic. When this is well blended add 1/2 cup grated Parmesan cheese and 2 T of grated Romano cheese. She also adds a little salt and butter.
If you are planning on freezing your pesto,don’t add the cheese. Pesto freezes nicely in ice trays,but needs to be tightly sealed.
Imagine pulling this out of your freezer in the dead of winter. This will anchor your toes into remembering the warmth of summer.
